On
Wednesday, May 28, 2008, the Hospitality Management Department took
a trip to Clemens College in Suffield, Connecticut. The purpose
of the field trip was to learn about fine dining from a college
that has a superior reputation in customer service. The students
met Dean Kenneth Zane, Head Chef David Greemon; Mrs. Sara Rutter,
Service Instructor; Mrs. Jolee Swanson, Director of Admissions;
and Ms. Ann Salinaan, Admissions Representative. During the
presentations, students learned a little history about the college
in addition to the different styles of food and beverage service.
Clemens College was built in 1962 for monks.
It was then transformed into an International College for Hospitality
Management. Its mission was for students around the world to learn
American fine dining and hospitality culture at its best.
The college grew to become a school for anyone who is aspiring to
learn about Culinary and Hospitality Management.
Students enjoyed an exceptional meal served by the
students at the college. The food had wonderful presentation
and whet everyone's appetite. They had minestrone soup, Saint
Alphonsus house salad, Pasta Primavera, Grilled Chicken Breast with
Port Wine Mushroom Sauce and a brownie for dessert.
The students enjoyed themselves
and learned a lot about excellent food service.
